Step 2: Roast the Carrots Until Golden
Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper for easy cleanup. Arrange the carrots in a single layer on the prepared sheet, making sure they’re not crowded—overcrowding leads to steaming instead of roasting. Drizzle with olive oil and sprinkle with cumin, salt, and pepper. Use your hands to massage the oil and spices into the carrots until they’re evenly coated—this ensures every bite has flavor. Roast for 20-30 minutes, depending on carrot thickness, until they’re easily pierced with a fork near the stem and have gorgeous caramelized edges.
